  • Is it possible to dry-age only 1 steak? Normally we dry-age a whole loin but never one steak. After many people requested this experiment today I deliver it with 3 different methods. I was shocked by this experiment and it is something you can try at home easily.

                                                  The saltiness of the fish sauce is supposed to make the steak give up it's moisture. Trapping the steak with the fish sauce in butter is basically marinating your steak in fish sauce, which tastes horrible. I suggest vacuum sealing your steak with 4 tsps. fish sauce per pound and letting that sit in the fridge for 3 days. You'll see a lot of liquid being drawn out of the meat. After 3 days take it out of the vacuum seal, lightly rinse and dry the steak. Then wrap it in cheese cloth and put it back in the fridge for another 3 days, flipping it over every day and changing the cheesecloth when it gets wet. The steak will give up some more moisture and become dry aged. This technique is the best I've tried and there is no trimming necessary. You get that deep beef flavor that I desire. I will try the thyme butter aging method you showed in this video. It'll be interesting to see what the steak will be like in the butter for more than 14 days.

                                                                    I don't know where you got the combination of fish sauce and butter, but the method I saw was either only fish sauce aging or only butter aging. I've actually tried fish sauce aging and it works pretty well once its seared. I can't imagine it working together with butter because the fish sauce's enzymes will probably wreak havoc on the highly perishable butter. It's the exact same reason why you should never double dip utensils on a stick of butter if you're not gonna eat it all.

                                                                                I tried it! Took a 2" wide piece of New York steak, and did 16 days. It was good - good enough I'm going to do say 35 days with the full subprimal and see what the family thinks.
