  • Pineapple have enzymes that cut down proteins, they are called Bromelain. It is known that you can tenderize meat with this enzyme. Today I am pushing the limit to find out how much is too much. This experiment is for 4 steaks cut out of the same loin. They all have been exposed to the pineapple for 1hr, 6hrs, 16hrs and 24hrs. How much is too much?

      @Howard Wong Fresh. Canning cooks the pineapple and denatures the proteolytic enzymes. That's why canned is fine in Jello.

                                Fruit enzymes are really powerful.
                                Sometimes i cut a steak of pork shoulder... yes, a really tough cut.
                                Just throw it around with fresh pieces of pineapple in a bag for 10-15 min. Dry of, apply some oil, salt and pepper and throw it on the grill. Optionally, apply a litte glace at the end.
                                The result is juicy and really tender.

                                                                  I know exactly that dust feel they said on the 6 hrs one. I tried this method with some cubbed eye of round that I preped for some skewers, and i left it too long, I think 1:30 hrs or 2, for cubes..., and it was ruined, it desintegrated in your mouth and left a dust behind, horrible
