Binging with Babish: Congee from Mulan

  • I was gonna hold off on making this episode until the new live-action Mulan came out, but principal photography hasn't even started yet, and it's expected to come out in 2020. So as I slowly recover from Vidcon, join me as I make one of the simplest and most essential dishes in our illustrious human history: porridge. Specifically, porridge made from rice, topped with a smiley face bacon-and-eggs affair. Leave it to Mushu.

                                                Heat some chicken bones and meat with water and a bit of salt get the soupy water and use it in the congee, shred the chicken that if you cooked properly should be rlly tender and mix it with the congee, then add pepper fish sauce and prawn crackers

                                                  Well if were assuming that Mulan joined the military to fight the Huns, then it makes sense that it's bland. Typically, MRE (Made Ready to Eat rations) are made with the idea of large calorie meals made in short amounts of time. But, this meal is low calorie, since Mulan and her division is meant to fight head on in vast plains, so they can't have too many carbs, fat, sugars, and things like that weighing them down when they are in war. So, the meal that Mushu prepared (and the one that Andrew made), is very simple and time-efficient. Cook some rice, fry some bacon and two eggs and BOOM, breakfast. Now, there's no time for flavor development, no time for sauces to develop, no time to create a complex, deep flavor in anything. So, what naturally happens is that the congee becomes bland. Now remember that this is the military. So, the congee might have nutrional benefits with protien and things like that to promote her training. Of course this could be true and congee is actually delicious, but since we don't see an in-depth look at Mushu cooking the meal, we can never be sure. And so, that's the reason that the real congee is bland, or really how I see it.

                                                                                          used to make a rice porridge similar to the texture of this when I was kid. I remember it consisted of sugar, vanilla sticks, with a water like cinnamon broth. Simple, filling, and sweet!

                                                                                              I know this is a late comment but @bingingwithbabish would the addition of all the ingredients you added to the top of the bowl be enough flavor wise to impact the blandness from just the rice water version of the conghee?
